Easiest Appy Ever: Salad Skewers

I can’t take any credit for this appy, my SIL made it last summer and I’m sure there are a gazillion posts on Pinterest but it was such a fun (and fairly clean) way to eat my favourite ever salad: tomato and bocconcini (mozzarella).


You need 4 ingredients, 5 if you want to be fancy, and it comes together in less than 10 minutes.

Ingredients & supplies:
-      
-  
Equal amounts of:
o   cherry tomatoes
o   mini bocconcini balls
o   basil leaves
-        -  balsamic glaze
-         - skewers

Instructions:
        1.    cut cherry tomatoes in half
        2.   build skewers in this order:
-   half tomato, bocconcini ball, basil leave, other half tomato
-   if you are using the short skinny skewers, do one set per skewer… we could only find the big bamboo skewers so did two sets per skewer
       3.    arrange skewers on a plate and drizzle with balsamic glaze4.  optional: you could also drizzle on a bit of olive oil but we just did the glaze and it was perfect!

These salad skewers were so easy and deliciously refreshing; especially in the heat wave we are enduring right now. If you need to travel with this appy simply put the skewers together at home and store in the fridge until you need to leave. Once you arrive at your destination arrange the skewers on a plate, drizzle on the balsamic, serve and enjoy all the compliments!

Tasty Tuesday: Baked Artichoke Dip

Today I am sharing my recipe for the easiest party please ever.  It is by far my most requested recipe for family dinners, cabin weekends and parties which is lucky for me because it’s ready to serve in 15 minutes.

Ingredients
  • One 14oz can artichoke hearts
  • 1/2 cup parmesan cheese
  • 1/2 cup mayo
  • 1/2 cup plain greek yogurt
  • 1/2 tsp garlic salt
  • dash of lemon juice


Directions
  1. Drain and chop up artichoke hearts (FYI this is the most labor-intensive step)
  2. Mix everything in a bowl until combined.
  3. Transfer to an oven-safe container
  4. Bake at 350 for 10 minutes.
  5. Serve with crackers or tortilla chips or both! 

Chop artichoke hearts.

Mix everything together.



Pour in oven-safe container and bake.


Serve and take in the compliments. Get ready, there will be many.

Simply Delicious Spinach Dip

Every time we have people over K asks what appie she should bring and I always ask for the same thing: spinach dip.  It's amazing, so easy to make and always a crowd pleaser... except for my husband who for some crazy reason isn't a fan but really that just means there is more for me!
A huge thank you to K for introducing this deliciousness into my life!

Ingredients:
1 package frozen chopped spinach
1 package dry vegetable soup mix (I use Knorr)
1 can water chestnuts
1 cup mayo
1 cup greek yogurt 
 
Directions
1. thaw spinach, squeeze out all excess liquid* 
2. chop water chestnuts 
3. throw spinach, water chestnuts, soup mix, mayo and greek yogurt into a bowl and mix it all together
4. Serve and enjoy!
My favourite way to devour this dip is dipping big chunks of sourdough bread into the bowl but it's also delicious with tortilla chips, pita bread, carrots... the options are endless!
